More than enough fiber is present in vegetable juices than is required to keep our systems operating well.</p>
<p><strong>Asparagus</strong><br />
This vegetable can be difficult to cultivate, but once established the beds can produce for hundreds of years. Asparagus is rich in asparagine, an amino acid that is destroyed by cooking. It is an excellent inclusion in fresh vegetable juices. It is a mild diuretic.</p>
<p><strong>Beets</strong><br />
Beets are high in vitamins and minerals and are excellent for strengthening the gall bladder and building blood. The tops are excellent salad greens. Beet juice is very strong and should be drunk only blended into other vegetable juices and not drunk alone.</p>
<p><strong>Broccoli</strong><br />
Broccoli is the immature head of a flower, picked before blooming. It is rich in vitamins and minerals and also protein.</p>
<p><strong>Brussels Sprouts</strong><br />

<p><strong>Cabbage</strong><br />
Raw cabbage provides a rich source of vitamins and minerals as well as sulfur compounds. Drink cabbage juice within a minute as the essential elements immediately begin to oxidize. Use it in a mixture of vegetable juice. Do not store this juice. Juice it last and drink it fresh from the juicer.</p>
<p><strong>Carrots</strong><br />
Carrots are, perhaps, the most valuable vegetable for juicing because of their healing properties. It is the usual base to which other juices are added. Although it has a high sugar content, the blend of ingredients in carrot juice cannot be excelled for balanced nutrition.</p>
<p><strong>Celery</strong><br />
Celery is high in minerals and is a significant source for magnesium. It does not stand alone as a palatable juice for drinking, but it is an excellent flavor enhancer for other juices. Chopping the celery stalks into short pieces will help to prevent the long celery strings from clogging the juicer. Be sure to juice the leaves as well..</p>
<p><strong>Cucumber</strong><br />
Cucumbers are an excellent addition to a mix of vegetables for juicing. They are high in potassium and contain other minerals as well.</p>
<p><strong>Collards</strong><br />
Collards are rich in calcium and are high in vitamin A and iron.</p>
<p><strong>Fennel</strong><br />
Fennel adds its own distinctive sweet taste to vegetable juice and has the nutritional qualities of celery.</p>
<p><strong>Garlic</strong><br />
Garlic promotes enzyme action and adds its own distinctive taste to vegetable juices.</p>
<p><strong>Ginger Root</strong><br />
The distinctive flavor of ginger is a welcome addition to the palate of flavors available to enhance vegetable juices. Use it sparingly until you are aware of the character that it adds to the juice.</p>
<p><strong>Kale</strong><br />
Kale is in the cabbage family with similar nutritional qualities.</p>
<p><strong>Lettuce</strong><br />
There are many varieties of lettuce. Iceberg lettuce is widely available because it is easy to grow and has a good shelf life. However, it is almost worthless as food. Look for the dark leafed varieties. Romaine is a good choice. It juices well, but it has a very short shelf life.</p>
<p><strong>Onions</strong><br />
Onions come in a variety of sizes and attributes. Some are very strong flavored and others are sweet and mild. Green onions may also be juiced, adding their own &#8216;onion&#8217; character to the drink.</p>
<p><strong>Parsley</strong><br />
Parsley helps to reduce the strong odor and flavor of garlic and is an excellent source of chlorophyl. Juice it with other vegetables in order to prevent clogging the juicer with the dense pulp that forms when it is juiced alone.</p>
<p><strong>Peppers</strong><br />
Peppers come in a wide variety of colors and flavors from sweet to very hot. If a milder juice is desired, remove the seeds before juicing,</p>
<p><strong>Radishes</strong><br />
Red radishes may be hot or mild. The white ones are mild. They provide an interesting variation of flavor.</p>
<p><strong>Spinach</strong><br />
Spinach juice is very mellowing to a strong flavored mix of vegetable juices. It is rich in minerals and vitamins.</p>

There are many varieties of apple, many with distinctive flavors and textures which make them valuable for eating out of hand or making applesauce, pies, juice, cider, and vinegar. Apples are interesting in that they are bound to grow in the temperate zones of the world because they require a certain number of days below freezing every year for them to bear fruit. This places them in close proximity to the major population centers of the world and modern transportation makes them available world wide and all year long. Like bananas, they are universally available and very rich in vitamins A and C.</p>
<p><strong>Grapefruit</strong><br />
Luther Burbank developed the Grapefruit by crossing the orange and the lemon. Grapefruit has become an important commodity in the winter fruit market. The sweet red fruits are a popular gift item during the winter holidays. As is typical of citrus fruits, grapefruit is rich in vitamin C.</p>
<p><strong>Grapes</strong><br />
The varieties of grapes are varied with corresponding differences in taste according to color. The bright taste of the purple grape, the spicy taste of the red grape and the sweetness of the white grape offer a palate of flavors with which to satisfy a wide variety of tastes. The grape seeds are rich in pycnogenol, also called grape seed extract. The benefit of the seeds may be had by processing the whole grape in a blender. The pycnogenol is a nutrient that the body uses as a precursor to many materials used in healing the body of disease.</p>
<p>Always wash commercially grown grapes carefully as they are sprayed with poisonous materials to protect them on the vine.</p>
<p><strong>Lemons and Limes</strong><br />
Summertime and lemonade go together. Nutritionally, they are rich in vitamin C, bioflavonoids which are vitamins that maintain the strength of the walls of cells and capillaries. Bioflavonoids are found in the soft white inner skin of the lemon.</p>
<p><strong>Melons</strong><br />
The varieties of melons are rough skinned, orange-fleshed varieties such as the Rocky Ford and the Tender-skinned honeydew with its pale green flesh. They are the most nutritious of fruits, ranking ahead of oranges and watermelon. They are excellent sources for vitamins A and C and they also assist in treating anxiety, so if you are worried, eat a cantaloupe.</p>
<p><strong>Oranges</strong><br />
Through 1800&#8242;s oranges were not universally available, but now they are abundant everywhere. They are a seasonal fruit and they are best during the winter months, but they can be found year round with their cheery flavor. As with all vitamin C bearing fruits, they are at their nutritional best when freshly squeezed. The universal orange color of commercially grown oranges is produced by treating the skins to make them uniform and to give them sales appeal. An orange that has a pale skin is nutritious, so don&#8217;t let the color of the skin dissuade you from enjoying locally grown oranges if you are fortunate enough to be in a semi-tropical land.</p>
<p><strong>Pears</strong><br />
Pears come in several varieties. The usual ones we find are the commercially grown ones that have been carefully selected for commercial use. Unlike apples, they have a very short period when they are ripe and before they spoil. They are shipped green and ripened in the store or at home, like bananas. They are ripe when they are soft and the stem pulls out easily. They are rich in vitamin C. They also provide calcium, potassium, phosphorus and other minerals.</p>
<p><strong>Pineapples</strong><br />
The pineapples that are available in most stores are picked green and are ripened in transit. Field ripened pineapples have a distinctively sweeter flavor and a yellow skin. They are rich in vitamin C and minerals. They are also rich in bromelain which is a powerful digestive enzyme and is very beneficial when taken with some dietary supplements.</p>
<p><strong>Tomatoes</strong><br />
The tomato was long considered to be poisonous to the western world. They were used as ornamental plants and called &#8216;love apples&#8217;. It was after a man who had visited India and saw that tomatoes were good food, sat on the court house steps of an American city and actually ate a &#8216;poisonous&#8217; love apple in full view of the public &#8211; and he didn&#8217;t die, that tomatoes became a staple in the diet of the western world. Commercial tomatoes that are picked green and store ripened may look pretty but they are missing the nutrition that is available in a vine ripened tomato.</p>
<p><strong>Watermelons</strong><br />
We all know about watermelons but we may disagree on how to pick out a perfectly ripened one. It should make a hollow sound when it is thumped with a knuckle. Watermelon rinds make tasty pickles but the best nutrition of the rind is gotten by juicing.</p>

These are very nutritious, thirst quenching, hunger satisfying alternatives to the ubiquitous carbonated and excessively sweetened beverages.</p>
<p>It takes a little planning, but we should take the time and make the effort to plan such an important part of our life as our health and longevity.</p>
<p>There are many delicious combinations of fruits. The very juicy fruits such as pears and grapes may be combined with a host of different berries, such as strawberries, blueberries to make &#8216;to die for&#8217; flavors. Apples are a standard staple for juicing. Peaches, and cherries in season are excellent.</p>
<p>You might experiment by juicing a variety of fruits separately and blend combination in a small container to determine what you like the best. As the seasons progress and we go from strawberries to blackberries, and peaches to apples, we have an extensive palate of flavors to blend into a cornucopia of delicious variations.</p>
<p>Of course, you will want to use fruits at their juicy best. I see people eating hard pears, peaches and plums. They may look pretty but they lack the flavor and nutrition, the &#8216;deliciousness&#8217; of the fully ripened fruit. Most commercially grown fruits are picked and shipped green and are intended to be ripened at the point of delivery. Plums are a good example of this practice. They are full formed but not fully ripe when you bring them home. (Ideally, you would buy tree ripened fruit ready to eat, but this is not how commercially grown fruit is handled. A trip to a farmer&#8217;s market is a treat when you find fully ripe and ready to eat fruit in all its glory.) The fruit should be kept in a warm place and covered with a paper bag to hold in the ripening gas (ethylene) that is emitted by the green fruit. The warmer the fruit and the more gas is retained, the faster the fruit ripens.</p>
<p>This offers the opportunity to control the ripening speed so a relatively large supply of fruit will not ripen all at once, the fruit that is kept cool and ventilated will not ripen at the rate that warm and enclosed fruit will ripen. The ripening process converts starch to sugar, the texture becomes soft and juicy, and the acid nature of the green fruit becomes neutral. The fruit becomes aromatic and smells&#8217; ripe&#8217;. Then it is at its most nutritious and delicious best.</p>
<p>On the other hand, strawberries are not ripened by ethylene but by genes. As the berry ages, more ripening genes are developed to accelerate the ripening process. </p>
<h3>FRUIT JUICE RECIPES</h3>

<strong>Lemon~Lime Ginger Ale</strong><br />

<li>1 apple, cored and sliced</li>
<li>1/4 lemon</li>
<li>1/2 inch fresh ginger (less if you find the taste too strong)</li>

<p>A friend of mine describes drinking freshly made fruit juices like this:</p>
<p>    &#8220;If you have never taken a mouthful of cantaloupe juice or strawberry juice mixed with apple, you simply have not lived. Blueberry juice is a taste of liquid heaven.&#8221;</p>
<p>Freshly made juices are a tremendous source of bio-available vitamins and minerals which are the partners of enzymes and co-enzymes.  Vitamins activate enzymes and without vitamins, enzymes could not carry out their work, and we could not live.</p>
<p>Enzymes act as catalysts in hundreds of thousands of chemical reactions that take place throughout your body, and are  essential for digesting, absorbing and converting food into body tissue.  Enzymes produce energy at the cellular level and are critical for most of the metabolic activities taking place in your body every second of every day.</p>
<p>Another benefit of drinking fresh juices and smoothies is that your body can absorb MORE of the vitamins and minerals then if you were to eat the fruits and vegetables whole!  Many of the nutrients are TRAPPED in the fiber and by blending fruits and vegetables, you break down the fiber and release the vital nutrients.  </p>
<p>Example:<br />
When you eat a raw carrot, you are only able to assimilate a small percentage of the available beta carotene. When a carrot is juiced, removing the fiber, a LARGE percentage of the beta carotene can be assimilated by your body.</p>
<p>Of course, you still need to eat whole produce because fiber is also an important part of your daily diet.</p>
<p>Meeting you or your children&#8217;s need for energy and nutrients is essential for good health. Children who do not meet their needs for energy may stop growing and gaining weight.  In severe situations, they can develop a condition which is life threatening called protein energy malnutrition. Peel all fruits and vegetables that are not organically grown because the peel is where most of the chemical residues can be found.  While most skins of organically grown fruits and vegetables may be left on, with the exception of waxed produce, the skins of pineapples, kiwis, oranges, grapefruits and papaya should be removed. </li>
<li>Choose fresh ripe produce.  Rubbery vegetables, bruised fruit, wilted greens and over or under-ripe fruits will produce juices that are neither tasty nor healthful.</li>
<li>Cut the fruits or vegetables into pieces that will fit into the mouth of your juice machine.  Turn the juice machine on and push the pieces through the mouth of the juicer.  As you juice, pulp will collect in a large receptacle.  If you don&#8217;t clean the pulp out right away, it will develop a sour odor and tiny gnats and fruit flies may appear after 8 to 10 hours.</li>
<li>It is best to drink freshly made juices within one day.</li>

<strong>How to make perfect homemade smoothies and shakes:</strong></p>
<li>Put the fruit in the blender first. Make sure that the items are smaller than a golf ball so they will blend completely. Add the liquid ingredients next.</li>
<li>Fasten the lid and press the start button. Use high speed for about 20-30 seconds.</li>
<li>Stop the blender and check to see if the ingredients are well blended. Sometimes the frozen fruit will jam under the blade. If there is jammed fruit, use a spatula to unjam the fruit, and blend again.</li>
<li>Once the mixture is evenly blended, slowly add two ice cubes through the opening of the blender lid. Keep adding one or two ice cubes at a time until the blender sounds smooth. If your blender is not strong enough to blend ice cubes, omit the ice and substitute just enough ice cold water or fruit juice so that the shake will have a milkshake consistency.</li>
<li>If the shake/smoothie is too thin, add more fruit or ice. If it’s too thick, add more liquid.</li>

<p>Heightened Monocyte Killing and Bacterial Function: Monocytes are the largest cells of the blood, averaging 15-18 micrometers. They make up about 7 percent of the leukocytes. Monocytes are actively mobile and phagocytic. They are capable of ingesting infectious agents and other large particles.
